Summertime always makes me think of seafood. On hot summer days when you’ve been soaking up the sun or if you’re really lucky, enjoying the ocean breeze at the beach, seafood always hits the spot and is so in season. Shrimp is one of the quickest things to make as it cooks in only a few minutes and can really be made to take on any type of flavor you want! So with all that said, say hello to your new favorite summertime shrimp dish! It’s got all the important s’s too… simple, spicy and sweet. Total crowd pleaser and won’t cramp your style when you’ve let the summertime fun get the best of you […]
Asian Pork and Veggie Rice Bowl
So first and foremost, I have been a pretty awful newbie food blogger. Between a crazy summer schedule with lots of travel, visitors and weddings and now starting grad school while working full time- I definitely let this fall to the way side. I am now trying to find a new balance! Now that it’s September and a restart/refresh in a lot of ways I’m going to try to get caught up and share lots of the delish stuff I ate or cooked the past few months! Plus, this is my happy place and as I learn how to juggle this new schedule of mine, I need to make sure I make time for this […]
Three Not’chd: Unexpected Foodie Find
One of my favorite things about moving back to Charlottesville, is being constantly excited and surprised by all the new delicious restaurants that pop up around town. Don’t get me wrong, I ate my way through Hooville when I was at UVA and most of my favorites are the same but it’ s pretty fun to check out all the new places and have some new foodie buddies to do it with. I left my # 1 eating partner in crime back in Arlington (miss you Shruts) but was thrilled when Kim, who started at my office a few months after me, quickly become my go to lunch date. One of our first and continually favorite […]
One Pan Pesto Zoodles
Howdy my friends! So today I’ve got a super simple, heavy on the veggie, one pan meal to share with you. It can be made vegetarian or with meat AND for everyone with food allergies- it is gluten free and could be vegan if you either made or bought a pesto with no parmesan cheese. My favorite part? Everything’s cooked in one pan and it’s very light, making it the perfect lunch or dinner as the weather get’s warmer. The beautiful part about these basic recipes is that you could really make it your own! I included chicken sausage in the recipe as it was for dinner and we wanted to add a little more […]
Coconut Crusted Chicken Asian Salad w/ Spicy Peanut dressing
Get ready for a salad that cures the ” oh no, not another boring salad” sentiment and really steps up your office lunch game! The chicken is crusted with unsweetened coconut and baked- so it’s nice and crispy without the grease & fat from frying and topped with a delicious peanut asian dressing. Highly recommend you cycling this into your Sunday meal prep plan! It would also make some delicious asian taco’s with a shredded carrot and cabbage slaw… I’ll work on testing out that idea asap. First thing’s first, all props go to Clean Eating for the chicken recipe! While I did make my favorite peanut dressing and spice up the salad a bit with extra […]
Brussels & Bacon Pasta
This is the perfect spring dish… can you tell I’m dreaming of warmer weather as I stare out at the remnants of a late march snow? It’s my favorite type of dish in that it’s a combo of light and fresh flavors, lots of veggies and lemon juice, paired with indulgence in the form of bacon and parmesan cheese. It makes for a really easy weeknight dinner or pasta dish for a picnic or BBQ. I’m already envisioning eating this at vineyards this summer paired with bottles of rose or white wine. Sigh. Bottles are acceptable- right? The best part, this only takes 10 ingredients to make and 20 minutes to cook. Ingredients: brussel sprouts, asparagus, lemon, white onion, garlic, chicken […]
Lemon Dijon Chicken
So, it’s day 2 of the whole 30 (the second attempt) and I’ve already dropped the ball on being organized and meal prepping. This, I can already tell, and yes I have read over & over, is the key to succeeding on this change in eating. The inner planner in me loves this in theory and then oversleeps and runs out the door without thawing chicken or doesn’t make a list for the grocery store. This is one of those evenings when I come home and feel crazed I’m so hungry and on the verge of making a terrible desperate food decision.. especially when hearing my other half had a burger for lunch. Yes, we […]
Sheet Pan Tandoori Chicken
Enter a delicious, easy clean up, sheet pan dinner! You can make it ahead & let it marinate for up to a day. Adam and I follow the “whoever cooks doesn’t clean” rule, but with two people who equally love to cook and equally hate the dishes, it often results in rock paper scissor battles OR, the worst method…. who can out wait the other. But- this recipe is the easiest clean up ever. You fold up the tin foil and throw it away! TADA! Leaving more time for your evening routine- whether that be Netflix binging, reading, exercising (go you) or putting kiddo’s to bed. Plus- did I mention it’s delicious? Do not let […]
