So first and foremost, I have been a pretty awful newbie food blogger. Between a crazy summer schedule with lots of travel, visitors and weddings and now starting grad school while working full time- I definitely let this fall to the way side. I am now trying to find a new balance! Now that it’s September and a restart/refresh in a lot of ways I’m going to try to get caught up and share lots of the delish stuff I ate or cooked the past few months! Plus, this is my happy place and as I learn how to juggle this new schedule of mine, I need to make sure I make time for this […]
Mushroom Parmesan Risotto
Welcome to the ultimate delicious, cozy, creamy, customizable side dish. Risotto! I made this a few weeks back with our favorite Slow Cooker Short Ribs and it was the perfect compliment. The richness of it works great with anything saucy ( it holds the flavors from sauce ah-mazingly) OR is great paired with fresh vegetables to make it feel lighter. The awesome thing about risotto in general is it’s not complicated and can really be made with any type of vegetable or additions you want. Also, it immediately makes the meal feel like a splurge because of it’s creaminess and cheesiness. Some of my favorite risotto’s feature asparagus, zucchini or pancetta. But this particular version […]
Slow Cooker Short Ribs (aka Bday Meal!)
Growing up we always had a tradition in our house that you could request any meal you wanted for your birthday dinner, and my mom would make it for you! I am lucky that my mom is such a good cook and we all would get so excited each year knowing we were going to have our favorite mama Humphrey special. Usually I chose steak, mashed potatoes & asparagus or my mom’s famous lemon pasta with chocolate raspberry cake. I’m drooling now. Honestly I get just as excited for my sister and Dad’s birthday choices as they are always my other favorites! Well, Adam and I have adopted this favorite tradition in the past few […]
Brussels & Bacon Pasta
This is the perfect spring dish… can you tell I’m dreaming of warmer weather as I stare out at the remnants of a late march snow? It’s my favorite type of dish in that it’s a combo of light and fresh flavors, lots of veggies and lemon juice, paired with indulgence in the form of bacon and parmesan cheese. It makes for a really easy weeknight dinner or pasta dish for a picnic or BBQ. I’m already envisioning eating this at vineyards this summer paired with bottles of rose or white wine. Sigh. Bottles are acceptable- right? The best part, this only takes 10 ingredients to make and 20 minutes to cook. Ingredients: brussel sprouts, asparagus, lemon, white onion, garlic, chicken […]
Lazy Sunday Sweet Potato Hash
We’ve been really lazy on 2018’s weekends so far, especially when it comes to weekend breakfast’s/lunch/brunch meals and getting out of bed early. I mean it’s hard to be motivated when every morning it’s usually somewhere between 5 and 20 degrees, making doing things outside or get started with your day a little harder. That being said, this hash is the perfect lazy, eat brunch around 2 pm on a cold winter day, type of meal. Not to mention it’s made of all good thing’s- veggies, sweet potato’s and chicken sausage, letting you stick to those healthy eating resolutions and feel spoiled. I will say, we did better than usual this morning and went on a […]
Shakshuka
Shakshuka is a flavorful north African baked egg dish with sautéed peppers, tomatoes and spices, topped with poached eggs and herbs. It’s one of those dishes that sounds fancy and complicated but is actually very simple and delicious. It’s the perfect dish for a cozy fall dinner or a savory brunch with friends. Plus, it has the added bonus of being a healthy vegetarian option with tons of flavor. Meatless Monday anyone? This particular version does include chorizo though because… well it’s delicious. Simple Ingredients, Tons of Flavor The first time I had this dish at a restaurant, I was convinced it must have hundreds of spices I had never heard of. After realizing my […]
Sheet Pan Tandoori Chicken
Enter a delicious, easy clean up, sheet pan dinner! You can make it ahead & let it marinate for up to a day. Adam and I follow the “whoever cooks doesn’t clean” rule, but with two people who equally love to cook and equally hate the dishes, it often results in rock paper scissor battles OR, the worst method…. who can out wait the other. But- this recipe is the easiest clean up ever. You fold up the tin foil and throw it away! TADA! Leaving more time for your evening routine- whether that be Netflix binging, reading, exercising (go you) or putting kiddo’s to bed. Plus- did I mention it’s delicious? Do not let […]
