Mushroom Parmesan Risotto

Welcome to the ultimate delicious, cozy, creamy, customizable side dish. Risotto! I made this a few weeks back with our favorite Slow Cooker Short Ribs and it was the perfect compliment. The richness of it works great with anything saucy ( it holds the flavors from sauce ah-mazingly) OR is great paired with fresh vegetables to make it feel lighter.     Growing up we always had a tradition in our house that you could request any meal you wanted for your birthday dinner, and my mom would make it for you!  I am lucky that my mom is such a good cook and we all would get so excited each year knowing we were going to have our favorite mama Humphrey special. Usually I chose steak, mashed potatoes & asparagus or my mom’s famous lemon pasta with chocolate raspberry cake. Elvis Banana Bread

Warning: This banana bread is not for the faint of heart. It has peanut butter, chocolate, and caramelized bacon bits. It’s straight up over the top delicious and funky ( as Guy Fietti would say).
