Prep
  1. Pre heat oven to 425 degrees and spray baking sheet with cooking spray. You can use tin foil but the chicken may stick slightly.
  2. Combine the bread crumbs and the parmesan cheese in a bowl. If using plain bread crumbs I suggest you add salt, pepper, garlic powder, dried italian herbs and a dash of chili powder/paprika.
  3. Set up a breading station on the counter so it’s an easy assembly line. A bowl with egg or melted butter, the raw chicken, a plate with bread crumbs and lastly a greased baking sheet.
Chicken
  1. Carefully slice the chicken in half lengthwise, making thinner breasts.
  2. Follow the assembly line: brush the butter on the chicken or dip the chicken in the egg and then place on the plate with bread crumbs. Be sure to cover both sides of chicken generously.
  3. Place your chicken on the baking sheet and continue with all the pieces.
  4. Cook in oven for 15-20 minutes. As chicken browns, about half way though flip over so the breading can crisp on both sides.
  5. Once chicken looks browned, spoon 2 tbsp of marinara sauce on each piece of chicken. Add a thin slice of fresh mozzarella ( if indulging). Return to the oven for 3 minutes, just long enough for the cheese to slightly melt.
  6. Top off with some fresh basil and red pepper flakes if you like some spice and serve over spaghetti noodles, zoodles or alone with a side of veggies!
